Update README to remove JRuby version notes
* JRuby 9.2.x has been EOL for a very long time, so there's no value in telling people to use a newer version. * https://github.com/jruby/jruby/issues/7106 was resolved with JRuby 9.4.0.0. All prior versions are EOL. * https://github.com/jruby/jruby/issues/7182 was determined to be a JDK issue and no longer occurs with more recent builds.
